🍓 Small-Batch Strawberry Jam with Vanilla & Balsamic
Sweet, a little fancy, and just right for toast, cheese boards, or gifting. Here’s a recipe to inspire you—perfect for turning a flat (about 10 lbs) of fresh Oregon strawberries into something special:
Strawberry Balsamic Vanilla Jam
Makes ~15 half-pint jars
10 lbs strawberries, hulled & halved
10 cups sugar (adjust to taste)
10 tbsp fresh lemon juice (about 2/3 cup)
5 tbsp good balsamic vinegar
2½ tsp vanilla extract or seeds from 2–3 vanilla beans
1. Macerate: Combine berries, sugar, & lemon juice in a large non-reactive bowl or pot. Let sit 1–2 hrs (or overnight in the fridge).2. Cook: Transfer to a wide, heavy-bottomed pot. Bring to a boil, and cook 30–40 min until thick, stirring often and skimming foam.
3. Finish: Stir in balsamic & vanilla. Simmer 2 more min.
4. Jar: Ladle into sterilized jars, leaving ¼” headspace. Water bath for 10 min, or refrigerate and use within a month.
This one’s especially good spooned over yogurt, layered in cakes, or paired with a soft cheese like chèvre or brie.

We strive to bring the most delectable culinary treasures to Central Oregon that the whole family will enjoy.
